Banana's

I have just been asked about a banana bread recipe .. and been given a fabulous new recipe for banana muffins(sugar free) by the lovely Cassie who makes the lovely Jewellery will try those tomorrow and let you know meanwhile here are some for you to try!


Banana Bread
Ingredients:
8oz/1 cup butter, softened
16oz/2cups sugar
7 large ripe bananas, mashed ( the blacker the skins the better!)
1 1/2 teaspoons vanilla extract
 
4 eggs, slightly beaten
24 oz cups flour
1/2 teaspoon salt
2 teaspoons baking soda
Directions:
Makes two loaves of banana bread.
1. Cream the butter and sugar. Blend in the bananas, vanilla and eggs.
2. Sift together the dry ingredients.
3. Add to the bread mixture and mix until just combined. Pour into two greased 9x5 inch loaf pans.
4. Bake at 350F. Check on the bread after 35 minutes (it may take up to 60 minutes). Banana bread is done when a Knife inserted in the middle comes out clean. Cool the banana bread in the pan for 10 minutes then cool completely on a wire rack.

This is one we use a fair bit as hubby has an aversion to eating a banana that isn’t just ‘off’ green for some reason best known to himself! It is very moist tasty bread and goes down well another favourite for ripe banana’s are; (great for lucnboxes!!)

Banana Cookies

Ingredients:
8oz/1 cup sugar
8oz/1 cup mashed very ripe bananas (2 medium)
1/3 cup vegetable oil
2 eggs
1 teaspoon baking powder
8oz1 cup self raising flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup chopped nuts
Directions:
1. Heat oven to 350 degrees F. Grease tray!
2. Mix banana, sugar, oil and eggs in large bowl with spoon. Stir in flour, baking soda, baking powder, cinnamon and salt. Stir in nuts.
3. Spread mixture in flat baking tray with sides... (same kinda thing you would do flapjacks in). Bake 25 to 30 minutes.
4. Cool completely. Cut into bars.
